Sure there’s the traditional Super Bowl snacks like cheese fries and loaded potato skins, buffalo wings (extra spicy please!) and pigs-in-a-blanket, fried pickles and mozzarella sticks.
I seem to be getting a pattern of fried and cheesy stuff…
But the Super Bowl doesn’t need to be a time when you throw your healthy eating to the wind. There are plenty of game day recipes out there that are both yummy AND healthy!
And think of it this way. If you eat healthier during the game, then you can have those one or two extra beers.
That’s logic, right?
Baked Chicken Wings (Yes! We are forgoing the sauce)
- 2 Large Packages of Chicken Wings
- 1/4 Cup of Dark Brown Sugar
- 2 Tbsp of Chili Powder
- 2 Tbsp of Paprika
- 2 Tbsp of Garlic Powder
- 1 Tbsp of Onion Powder
- 1 Tbsp of Cayenne Pepper
- 1 tsp of Salt
Step 1: Preheat the oven to 375F
Step 2: Combine the dark brown sugar, chili powder, paprika, garlic powder, onion powder, cayenne pepper, and salt in a large bowl. Be sure to mix well until the powder mixture is a solid color throughout.
Step 3: Add the chicken wings to the bowl (be sure to pat the chicken dry before this step!). Using your hands, move the chicken wings around in the powder until all the wings are covered in the mixture.
Step 4: Place the chicken wings on a baking sheet and place in the preheated oven.
Step 5: Cook 15-20 minutes and enjoy!
Turkey & Chicken Swedish Meatballs (Sauceless)
- 1 lb of Ground Chicken
- 1 lb of Ground Turkey
- 3 Eggs (2 yolks and 1 whole)
- 5 Garlic Cloves (Minced)
- 2 Tbsp of Onion Powder
- 1 tsp of Salt
- 2 Slices of White Bread (You can use stale bread)
- 1 Tbsp of Chopped Parsley
Step 1: Preheat the oven to 325F
Step 2: Place the white bread on a baking sheet and place in the oven. Bake until the bread is hard and is easy to crumble. This will be your bread crumbs.
Step 3: Combine the ground chicken and ground turkey in a large bowl.
Step 4: Add in the yolks, whole egg, garlic, onion powder, salt, our homemade bread crumbs, and chopped parsley. Using your hands, combine everything together.
Step 5: Taking small handfuls (about two tablespoons of the mixture) roll the ground meat into little balls. Place them on a tinfoil covered baking sheet.
Step 6: Cook for 15-20 minutes. Enjoy!
Beet and Goat Cheese Hummus
- 1 (15-ounce) Can of Chickpeas.
- 1 tbsp of EVOO (Extra Virgin Olive Oil)
- 1 tbsp of Salt
- 1 tsp of Lemon Juice
- 1 tsp of Lemon Zest
- 1 Medium Beet
- 4 tbsp of Crumbled Goat Cheese
Step 1: Preheat the over to 400F
Step 2: Peel the beet and cut off the ends. Cut the beet into quarters and wrap it in tinfoil. Place the tinfoil wrapped beet onto a baking sheet and place in the oven. Allow to cook until soft. This should take 20-30 minutes. When done, take out and to let cool.
Step 3: In a food processor, combine the chickpeas, EVOO, salt, lemon juice, and lemon zest. Remove from the food processor and place into a medium bowl.
Step 4: Add the softened beet into the food processor and puree until smooth. Remove from the food processor and add it to the bowl that has the chickpea mixture. Combine the two mixtures together.
Step 5: Take the crumble goat cheese and add it to the beet hummus. Combine the two by gently folding in the cheese. Be careful not to break up the goat cheese.
Step 6: Place the beet and goat cheese hummus in a serving bowl. For an extra touch, you can add a light sprinkle of chopped walnuts. Enjoy!
