Vegan Cookie Butter

Cookie Butter is a peculiar thing in the food industry.

It’s a kind of that you are either obsessed with and eat by the container OR a food that you have no desire to eat or even try.

Kind of like edamame, in my opinion. People either love those little pods of soy goodness or they detest them. *Confession: My mother loves them and my father can’t stand them.*

Vegan food is like that too. Either people love tofu or they HATE it. There’s no Fifty Shades of Grey.

And so, since I’m the kind of person who loves combining peculiar things, aka, I’m really in the mood for cookie butter and I’m vegan, here are some of my favorite vegan cookie butter recipes. They’re simple, easy and, dare I say it, kind of healthy. Who would’ve thought?!

*Since the directions are the same for each recipe, I’m just going to give it to you guys ahead of time, rather that make you read them over and over.*

Direction: In a high-power food processor, add the ingredients and combine until fully combined and it has a slightly glossy/shiny look to it.

Chocolate Chip and Almond Cookie Butter

Ingredients

  • 2 cups of Almonds (I personally like to use skinless for this recipe, but you don’t have to!)
  • 4 Pitted Dates
  • 1 tbsp of Coconut Sugar
  • 2 tsp of Vanilla Extract or the Seeds of a Vanilla Bean
  • 1 tsp of Flaxseed Oil
  • 1/2 cup of Vegan Mini Chocolate Chips

Oatmeal Raisin and Walnut Cookie Butter

Ingredients

  • 2 cups of Walnuts
  • 1/2 cup of Old Fashioned Oats (If you don’t like chunks then use 1-Minute Oats)
  • 1/4 cup of Raisins
  • 1/2 tbsp of Coconut Sugar
  • 1/2 tbsp of Soft Brown Sugar
  • 2 tsp of Vanilla Extract or the Seeds of a Vanilla Bean
  • 1 tsp of Cinnamon
  • 1 tsp of Flaxseed Oil

Cookie & Cream and Macadamia Cookie Butter

Ingredients

  • 2 cups of Macadamia¬†Nut
  • 1/4 cup of Unsweetened Coco-Powder
  • 4 Pitted Dates
  • 1 tbsp of Coconut Sugar
  • 1 tbsp of Coconut Cream
  • 1 tsp of Vanilla Extract
  • 1 tsp of Flaxseed Oil

Snickerdoodle and Cashew Cookie Butter

Ingredients

  • 2 cups of Cashews (Best to soak these overnight if you have a sensitive stomach)
  • 1 tbsp of Coconut Sugar
  • 1 tbsp of Light Brown Sugar
  • 1 tbsp of Light Maple Syrup
  • 1 PINCH of Cream of Tarter
  • 1 tsp of Vanilla Extract
  • 1 tsp of Flaxseed Oil
